Seaduction cocktail

While we were in Queensland we were invited to the Soul Surfers Paradise hotel for cocktails and hors d’oeuvres and I’m happy to report that this juicy delight features in my top two yummiest cocktails ever! (The other one was a Marger-tini at Matakauri Lodge, New Zealand.) I’m pretty sure you’ll love it too so here’s a video recipe just for you 🙂

RECIPE

Fill your cocktail shaker half with ice
Squeeze in 3 wedges of lime (don’t be afraid to get your hands dirty!)
A pick of mint, smack to infuse
60 mil pineapple juice
90 mil cranberry juice for tartness
30 mil Malibu
15 mil peach schnapps
Spoonful of frozen peach puree [my mixologist friend Tim Judge suggests you can replace the puree with a frozen sorbet. If peach is not available then perhaps a berry or citrus flavoured one. He also recommends replacing the Malibu for CIROC Coconut if you’re a vodka baby :)]
Shake and serve in a rocks glass, garnished with mint!
