Gajanan Vadapav, Naupada, Thane. When I came to Mumbai in 2009, one of the first questions asked to me at work was where I live. While the western and central suburbs seemed to be perfectly normal answers, the mention of Thane and Vashi evoked a different reaction. It was as if one was coming into work from another planet. Even when I shifted to Vashi few years later, the Visa jokes still continued, probably one should put up a Visa board at the Toll plaza, just to troll people. What I learnt though, is places like Vashi and Thane are much better organized than Mumbai city. Even though they are bustling with energy, there is an underlying peace, atleast in Vashi for sure. Yet, the concentration of work in and around Mumbai district ensures that a trip to Thane is rare, even though it's only 12-15 kms away. So when we ended up in 'Thane city' to attend a wedding, we weren't going to miss out on the food scene. Talking of which, one of the institutions around here is the Gajanan Vadapav, which opened shop in the 80s. As you can see in the click, the USP of this place is the yellow Chutney, served with the Vadapav. Made out of a very basic combination of besan and chillies, the chutney lends an inherent simplicity to the dish. When I compare it to the Ashok Vada Pav, it's almost like a Pujara and a Kohli, fiery vs. simple, flamboyance vs earthy; yet both supremely effective. Fresh and flavorful Vada, regular pav and a delicious chutney. Grab hold of a couple of those salted chillies and you'd have the taste of Thane linger on even after you've left. Do check this out, it won't be an explosion of flavors like Ashok, rather a subtle introduction; but a memorable one nonetheless.
