Monsoon is a perfect time to stay indoors and maybe host a fun house party. Gather your crew, play some fun games and eat some yummy food while you’re at it. But this time, why don’t you show off your cooking skills by baking these super cheesy and delicious cream cheese stuffed mushrooms? Here’s a recipe Vidhi Doshi a.k.a @RamenHairedGirl shared with us on how you can nail these at home in minutes.

What You’ll Need

10 Medium To Large Button Mushrooms

1 Tbsp Olive Oil

2 Tsp Finely Chopped Garlic

1/4 Cup Finely Chopped Onions

1/4 Cup Finely Chopped Vegetables

3 Tbsp Cream Cheese

3 Tbsp Cheese Grated + Extra For Sprinkling

2 Tbsp Finely Chopped Green Onions

Salt

Pepper

1/2 Tsp Chilli Flakes

Here’s How You Can Put It All Together

Clean the mushrooms with a damp cloth, remove the stems and keep them aside.

Sprinkle the mushrooms with a little salt and place them (cavity side down) in a preheated oven at 180C for 12 minutes. Once that’s done, drain on an absorbent paper to soak the extra water.

Heat olive oil in a pan, add the garlic and onions then sauté it for 1 minute. Add the zucchini and baby corn then cook for 3-4 minutes.

Finely chop the mushroom stems and add them to the pan along with chili flakes and pepper, cook for 5 more minutes. Transfer it to a bowl to cool slightly.

Add the cream cheese, grated cheese, salt, spring onion greens and mix well. Stuff the mushrooms with the filling, sprinkle some more cheese and pepper on top.

Bake in a preheated oven at 180C for 6 minutes on the middle rack and for 2 minutes on the top rack.
