Do you think you can ever find anyone who doesn’t like french fries? For us, it’s like food for the soul, TBH. But it’s not the healthiest option, no? What if we told you, you can enjoy fries and also get some nutrition with it? Vidhi Doshi a.k.a Ramen Haired Girl shares a recipe of zucchini fries with coriander mayo that are as yummy as french fries! Here it is.

What You’ll Need

2 zucchinis cut into finger-like shapes to resemble fries
1/2 cup Maida
1/2 tbsp onion powder
1/2 tbsp garlic powder
1/2 tbsp chilli powder
2 tbsp finely chopped coriander
Salt and pepper to taste
1/2 cup milk

The Coriander Dip

4 tbsps mayonnaise
2 tbsp finely chopped coriander
A few drops lemon juice
Salt and pepper to taste

Here’s How You Can Put It All Together

Place the zucchinis in a sieve over a bowl, sprinkle with salt, mix well and let it sit for 2 hours to remove all the excess water. Pat them dry with a kitchen towel so that no moisture remains.

Mix the maida, onion powder, garlic powder, coriander, salt and pepper in a large bowl and pour the milk into another large bowl. Place 2-3 zucchinis in the flour mixture. Then place them in the milk.

Coat them with the flour again lightly.

Deep fry till golden and crispy.

Drain on tissue papers and enjoy how with the Mayo dip.
