There’s a certain satisfaction that one experiences when a well-cooked meal is appreciated and loved by others. But if you really haven’t spent much time in the kitchen then to know the techniques and acquire the skills, there are simple and easy recipes to get you started. We got in touch with Vidhi Doshi a.k.a @RamenHairedGirl, who gave us one of the quickest and easiest recipes you’ll enjoy cooking. Just to ease you in, here’s the recipe of a yummy garlic and spring onion noodle soup you’re gonna love. Check it out!

What You’ll Need

1 tbsp oil
1.5 tbsp finely chopped garlic
1/4 cup finely chopped spring onions (white and green)
1/2 tsp grated ginger
1 tsp chilli flakes
3 cups of water/vegetable stock
5-6 lemongrass leaves (thin)
1/2 tbsp soy sauce
Hakka or ramen noodles
Salt and pepper to taste

Here’s How You Can Put It All Together

Heat oil in a pan, add the garlic, spring onions and ginger and then sauté for 2 minutes. Add the chilli flakes and sauté for 30 secs.

Add the water or vegetable stock, mix well and let it boil.

Now add soy sauce and lemongrass leaves (tie them together so they are easily removed as they are to be discarded later). Cover and let it simmer for 4-5 minutes till the lemongrass flavour is infused.

Discard the lemongrass. Add the salt, pepper and noodles and boil till the noodles are cooked properly.
