It’s been a few days since I started my low-carb diet because I wanted to see the changes my body goes through while I’m on it. A keto diet is when one maintains a low-carb, high-fat and adequate protein diet through a certain period of time. When a person starts the keto diet, there are many things the body experiences like the infamous keto fever (because the body faces carb withdrawals), fat burning and even improved brain activity. But if you’re new to this extreme diet, you’re gonna find it tough to look for substitutes to bread, chapatis, rice and pasta.
A lot of people think that keto food/diet food is boring and not flavourful, but that’s not true at all. In fact today, I’m here to prove that keto food could be yummy too by sharing a creamy and cheesy keto chicken recipe that I cooked just last night. I’m sure you’re gonna love it so much that you’ll forget all about carbs! Scroll down for the full recipe.
What you’ll need:
For the marination
250gms of boneless leg pieces (diced in desired sized cubes)
2 tbsp mustard mayo (mix 1 tbsp of mustard and 1 tbsp of mayo together)
1 tbsp paprika powder
3 tbsp ginger-garlic paste
2 tbsp melted butter
salt to taste
For the sauce
1/2 cup cream
1/2 cup milk
2 tbsp butter
1 cube grated cheese
10 gm cheddar cheese (optional)
1/2 onion, finely chopped
1 tbsp garlic powder
Salt to taste
4 tbsp water
How you can put it all together
Marinate the chicken a few hours before you cook with the ingredients mentioned above. This is for the flavours to kick in real nice, while you cook the chicken.
Take a non-stick skillet or a deep pan and on low heat, add butter. Let it melt for a few seconds and then add the onions.
Once the onions turn translucent, add the chicken to it and on low heat, cover the pan with a lid. In small intervals, keep opening the lid to flip the chicken every once in a while to make sure it’s cooked properly on both sides and doesn’t burn.
As soon as you feel like the chicken is cooked well, take only the chunks of chicken out and let the butter and onions stay in the pan. Add a little water to it, scrape out the chicken and onions off the sides of the pan and stir the water and the butter nicely.
Let the butter water cook a little and then add the cream, milk and cheese to it. Keep stirring to make sure the sauce doesn’t burn or stick to the pan, maintaining low heat. Then add garlic powder and salt to it.
Add the chicken to this sauce and stir slowly till the sauce has coated the chicken well. And, voila! Your cheesy and creamy keto chicken is ready.
You can have this chicken by itself because it’s pretty filling, thanks to the cream and cheese. But if you still wish to add more depth, you can eat it with cauliflower rice, on lettuce leaves or with a side of sauteed veggies.
That was super easy, wasn’t it? Now, whenever you’re in a rush or draw a blank on your keto lunch situation, you can easily cook this up quickly and hey, it’s extremely creamy and delish too!
