Indian cuisine is packed with flavours that just explode in your mouth like fireworks! And if you’re someone who loves trying out new dishes, experimenting with the flavours and cooking yummy food then this one’s for you. The uber-talented Vidhi Doshi a.k.a @Ramenhairedgirl recently cooked some paneer in roasted bell pepper gravy and shared with us her recipe. It’s simple, quick and easy to make in just 5 steps. Read on to find out how you can make it too!

What You’ll Need

2 red bell peppers (roughly chopped)
2 tomatoes (chopped)
3 large garlic cloves (chopped)
4 tbsp olive oil (divided)
1/2 tsp cumin seeds
1 chilli (chopped)
1 onion (chopped)
200 ml coconut milk
1/2 tsp coriander powder
1/2 tsp chilli powder
2 tsp kasuri methi
200 grams paneer (chopped)
Fresh coriander leaves for garnish

Here’s How You Can Put It All Together

Step 1: Put the bell peppers, tomatoes, and garlic in a baking tray, drizzle with 2 tbsp oil and bake in a preheated oven for 20 minutes.

Step 2: In another pan, heat some olive oil and add the cumin seeds. Once they crackle, add the onions and chillies and sauté for about 4-5 minutes. Then, keep aside to cool it down slightly.

Step 3: Now, add the roasted veggies, onions and coconut milk in a blender and blend to a smooth purée.

Step 4: Add this back to the pan along with the chilli powder, coriander powder, kasuri methi, salt and mix well. Then cook for about 3-4 minutes.

Step 5: Now add the cubed paneer and cook till the paneer is cooked through.

Step 6: Garnish with fresh coriander and serve!
