When you’re watching your diet, the main reason you tend to cheat is that you miss the flavours and taste. Am not saying healthy food or a salad is tasteless, but a lot of it doesn’t taste as good as other foods. But, what if I gave you a tasty yet healthy alternative for your bland meals? That’d be a win-win situation for your taste buds and your body, both. What You’ll Need
1 tbsp butter
1/3 cup finely chopped onions
1 tsp garlic
1/2 cup couscous
1 1/2 cup vegetable stock
1/3 cup boiled peas
2 tsp lemon juice
1/2 tsp cumin powder
1/2 tsp chilli flakes
5 mint leaves
Salt to taste
Here’s How You Can Put It All Together
Step 1: Heat the butter in a broad pan and add the finely chopped onions and the finely chopped garlic to it. Sauté this till the onions become translucent.
Step 2: Now add to this the couscous and salt to taste, and toast it for about 1 minute.
Step 3: Then add the low-sodium vegetable stock to this. I’ve used homemade stock but you can use the stock cubes too, in which case you’ll have to use less salt.
Step 4: Now turn off the heat and cover it for about 10 minutes till the couscous is cooked.
Step 5: Fluff the couscous with a fork and then add the boiled peas, lemon juice, cumin powder, chilli flakes, and torn mint leaves.
Step 6: Mix it up well and serve fresh!
