Pasta Stuffed Bell Peppers By Vidhi Doshi

Food stuffed in bell peppers looks so boujee, don’t you think? It’s something you’d order on a date night or at a fancy dinner when you’re in the mood for some real flavour to kick in. So when our favourite girl Vidhi Doshi a.k.a @ramenhairedgirl sent in her recipe for pasta stuffed in bell peppers, I had to check how many steps will it take to get the final outcome. And to my surprise, it is just 10 super easy steps. Don’t believe me? Scroll down and read for yourself!

What You’ll Need

3 green bell peppers

1/2 cup spaghetti broken into small pieces

1/4 cup chopped red bell pepper

1/4 cup boiled corn

1 tbsp butter

4 cloves garlic, finely chopped

1 small onion, finely chopped

1 tbsp maida/wholewheat flour

1 cup milk

1/4 cup fresh bread crumbs

1/4 cup grated cheese

Salt and pepper to taste.

Here’s How You Can Put It All Together

Step 1: Cut the tops off the green peppers and remove the seeds from inside. Discard the seeds. Take such green peppers that can stand vertically and have a flat base. Don’t throw the tops, the can be used for serving.

Step 2: Boil a pot of salted water and blanch the peppers in it for 3-4 minutes. Immediately remove and keep aside to dry.

Step 3: Meanwhile boil the corn and the spaghetti till it al dente (just perfectly cooked with a slight bite).

Step 4: Now we make a simple white sauce. Heat butter in a non-stick pan, add the onion and garlic and sauté for 1-2 minutes till translucent.

Step 5: Now add the flour and mix continuously for 1 minute or till it becomes slightly darker.

Step 6: Now add the milk and whisk constantly till it becomes a thick sauce. Add salt and pepper to taste.

Step 7: Switch off the flame. Add the boiled spaghetti, corn and red bell pepper to the sauce and mix well.

Step 8: In a bowl mix the breadcrumbs and the grated cheese.

Step 9: Now fill the mixture in the green peppers leaving 1 cm space on the top. Sprinkle the cheese and crumbs mixture on top.

Step 10: Bake in a preheated oven at 175C for 15-20 minutes till the top is golden and crunchy.
