Got a lot of leftover rice from last night? You’ve got two options—you either just do the usual and fry it or steam it again instead of throwing it away, or, you make something so boujee out of it that you will always go back to it. If the latter one interests you then you’re at the right place. Our girl Vidhi Doshi a.k.a. @ramenhairedgirl shared her recipe of stir-fried green beans with crispy rice and it looks so tempting. Keep reading to find out how you can make it too!

What You’ll Need

3/4 cup leftover rice (preferably sticky)

3/4 tbsp cornflour

5 tbsp oil

2 tbsp garlic

1 tsp ginger

1 onion, thinly sliced

150 gms green beans

1/2 red bell pepper, sliced

2 tbsp soy sauce

1/2 tbsp cornflour

Here’s How You Can Put It All Together

Step 1: Mix the leftover rice (preferably starchy or sticky rice) with the cornflour and salt, only if the rice doesn’t already have salt.

Step 2: Heat 2 tbsp of oil on a nonstick pan, place the rice mix on it and flatten it to make a disk.

Step 3: Cook this disk on each side for about 6-7 minutes or till it turns crispy. You will need to put more oil to cook the other side.

Step 4: Once cooked, break the disc into pieces and keep them aside.

Step 5: For the beans—heat oil in a pan, on high heat. Add the sliced onion and sauté them on a medium-high flame for about 1 minute.

Step 6: Then add the garlic, ginger and sauté again for 30 seconds.

Step 7: Now add the green beans, bell pepper, and a little salt. Sauté this mixture for about 3-4 minutes.

Step 8: Mix 1/2 cup water, 2 tbsp light soy sauce, 1/2 tbsp cornflour. Now, add this mix to the beans, cover it with a lid and let the beans steam for another 3-4 minutes. Add more water if required. (The beans will take longer if you cook them on a slower flame)

Step 9: Turn off the heat, add the crispy rice to the beans. Mix it all well and serve immediately!
