No wonder I find myself broke every month yet spend every last penny on ordering desserts. But Chef Priyank Chouhan, culinary head at Shiro knocked some sense in me by sharing his recipe for Mandarin velvet chocolate cake and I don’t think I will ever need to order desserts anymore. For Almond Sponge

Almond powder – 125 grams

Eggs – 4

Baking powder – 2.5 grams

Castor sugar – 125 grams

Fresh oranges – 2

For Dark Chocolate Mousse

Dark chocolate – 300 grams

Fresh cream – 150 grams

Whipped cream – 50 gm

For Orange Chips

Castor sugar – 200 grams

Saltwater to boil orange – 200 ml

Fresh orange – 1

Here’s How You Can Put It All Together

Step 1: In a saucepan, boil the two fresh oranges for 30 minutes. This step will take the bitterness out of the skin of the orange. Then, cut the oranges in half, remove the pips and place in a blender with castor sugar, ground almonds,
eggs and baking powder. Blend this mixture until it becomes smooth.

Step 2: Pour the mixture into the greased mould and bake at 180ºC temperature till either the knife inserted in the centre comes out clean or for about 10-12 minutes. Once done, keep the sponge at room temperature to cool down.

Step 3: Meanwhile, put some fresh cream in a saucepan and bring it to boil. Then, mix the hot cream and dark chocolate with a rubber spatula to form a smooth and shiny ganache. Once it cools down, add the whipped cream and lightly fold in the ganache in parts to make the mousse.

Step 4: Now, pour the mousse over the gluten-free orange sponge and level it evenly. Once leveled, keep it in the freezer to let it set properly. You can then cut it into desired shapes and serve with citrus orange glaze garnished with caramelised orange chips.
