It’s soup time, again! But this time, we’ve given it a cool twist (of onions). Because, why settle for regular soup when you can have cool soup? And so, presenting you the detailed recipe of French onion soup by our favourite gal Vidhi Doshi a.k.a. @ramenhairedgirl. It’s flavourful, light, super delicious and you’ve got to try it out for yourself! So read on to find out the entire recipe with pictures.

What You’ll Need

5 large onions, sliced thinly

3 tbsp butter

3 garlic cloves, finely chopped

2 bay leaves

1 tsp dried thyme or 5 sprigs fresh thyme leaves

Salt and pepper to taste

1 tsp whole wheat flour

3 1/2 cups vegetable stock.

One baguette

Mozzarella cheese

Here’s How You Can Put It All Together

Step 1: First things first! Keep all the ingredients ready. Now, heat butter in a pan and add all the onions to it. Mix the onions around so they are coated in butter. You can even use olive oil here but trust me, butter caramelises onions so well!

Step 2: Cook these onions on a slow flame with a pinch of salt to draw out the moisture for 30-35 minutes, while stirring occasionally and scraping the bottom stuck pieces. If the onions stick to the bottom you can add 2 tbsp water and deglaze the pan.

Step 3: After about 35 minutes, the onions should be browned, soft and beautifully caramelised.

Step 4: Now add the garlic, mix well and cook for about 1 minute.

Step 5: Now add the bay leaves, thyme, salt, pepper, and the flour. Cook this for a minute.

Step 6: Now add the vegetable stock/water and let it come to a boil. Lower the flame and let it simmer for about 15 minutes.

Step 7: Take 4 slices of the baguette and top it with cheese, salt, and pepper. Bake them in a preheated oven at 180C for 7-8 minutes and then broil them for another 5 minutes. Now, top them on the soup and enjoy hot!
