Being on a Keto diet can get really tough and boring. You run out of food options all the time and can’t stop complaining about it. We get it! And so, when Chef Karma Tenpa at Yazu sent in their recipe for broccoli edamame rice, I thought this was the perfect meal to make for those on Keto too. Edamame beans, .20 gms
Broccoli, .200 gms
Bell pepper, .010 gms
Onion, .010 gms
White truffle oil, .005 ml
Salt, to taste
Pepper, to taste
Butter (unsalted), .005 gms
Step 1: Blanch the broccoli and mince to make it finely chopped.
Step 2: Heat a pan on a low flame, add oil and butter.
Step 3: Put all the ingredients together and toss till it leaves the moisture and becomes dry. Meanwhile, start adding seasoning to it.
Step 4: At the end, drop some truffle oil over the broccoli edamame rice to enhance the flavor of the dish.
