Miss eating out at restaurants, trying new cuisines, and surprising your taste palettes? Sadly, we can’t step out of our houses, but that does not mean we can’t enjoy the latter! Vidhi Doshi a.k.a. @ramenhairedgirl recently made Khao Suey at home that looked bomb and we knew we had to share the recipe with y’all.

Khao Suey is a Burmese one-bowl meal which is more like a soup. It is believed that Indians working in Burma brought this recipe back home with them during World War II. It’s super yummy, creamy, and something that everyone should try at least once! Trust me, you won’t stop after the first time. To check out the full recipe, scroll down.

What You’ll Need

1/2 cup roughly chopped onions

7 garlic cloves

3 cm piece ginger, chopped

4 dried kashmiri red chillies (stem and seeds removed) soaked in hot water for 10 minutes.

1 tsp coriander powder

1 tsp cumin powder

1 1/2 – 2 tsp turmeric powder

Other ingredients

400 ml coconut milk

1 tbsp oil

1/4 cup chopped French beans

1/2 cup chopped carrots

1/2 cup small broccoli florets

2 tsp grated jaggery

1-2 tsp soy sauce

10 basil leaves, torn

Salt to taste

Chopped coriander

Chilli flakes

Fried onions

Fried garlic

Spring onion greens

Roasted peanuts

Lemon wedges

Here’s How You Can Put It All Together

Step 1: Blend all the ingredients for the paste together using 2-3 teaspoons of water. Should be a smooth paste.

Step 2: Heat oil in a nonstick pan, add the paste and cook it for 5 minutes till the oil starts leaving the paste.

Step 3: Now add the coconut milk to this along with 1 1/2 cup water. Stir and let it heat up on a low flame.

Step 4: Now, add the chopped veggies to this. You can add other veggies of your choice like zucchini, cauliflower, peppers as well.

Step 5: Let the veggies boil on a low medium flame for about 7-8 minutes. Keep stirring in between so that the coconut milk doesn’t curdle.

Step 6: Once the veggies are almost cooked, add the jaggery, soy sauce, and salt. Mix well and let it cook for 2 more minutes. Add more water at this point if the curry is thick.

Step 7: Right when you shut off the heat, add the basil leaves and mix well!

Step 8: To serve—place noodles in a deep bowl, pour the hot curry over it. Top with all the garnishes and enjoy hot!
