Craving Asian Food? Here’s How You Can Make Hakka Noodles At Home

The one thing I miss the most right now is going out for some Chinese food! But since that doesn’t sound like the safest option to satiate my Chinese food cravings, I had to think of another solution. And that’s when my favourite gal Vidhi Doshi a.k.a. @ramenhairedgirl sent in her recipe for Hakka Noodles. It looked so delicious and tempting, I knew I had to try it out this weekend. But before that, I knew I had to share the recipe with you guys as well, in case you were going through the same pain as I am! So, scroll down to check out the full recipe with step by step images.

What You’ll Need

Ingredients

1 Pack Hakka Noodles

2 Tbsp Canola Oil + 1 Tbsp Sesame Oil

2 Tbsp Finely Chopped Garlic

3 Red Chillies—2 Finely Chopped, 1 Slit

1 Medium Onion, Sliced Thinly

1/2 Cup Julienned Carrots

3/4 Cup Shredded Cabbage

1 1/4 Cup Thinly Sliced Bell Peppers

2 1/2 Tbsp Light Soy Sauce or 1 Tbsp Dark Soy Sauce

1/4 Tsp Vinegar

1/4 or 1/2 tsp pepper powder

Salt To Taste

1/2 Cup Spring Onion Greens

Here’s How You Can Put It All Together

Step 1: Boil your noodles according to package instructions with 1 tbsp oil and salt to taste. Do not cook the noodles fully, they should not be fully cooked, but should be only 80 percent cooked. This way they will retain a slight bite without turning into total mush.

Step 2: Once cooked 80 percent (2 minutes less than the recommended cooking time on the package), strain the noodles and run them under cold water for 5-7 seconds to stop the cooking process.

Step 3: Place 1 tbsp garlic and the finely chopped chillies in a heatproof bowl. Heat 2 tbsp oil in a small pan till extremely hot. Pour over the chillies and garlic and set aside to cool.

Step 4: In a large pan or wok, heat the remaining 3 tbsps of oil, add the remaining garlic and chilli and saute for 30 seconds on a high flame.

Step 5: Add the onions and saute for one more minute.

Step 6: Now add all the vegetables at once, toss and saute on a high flame for 2-3 minutes. Do not overcook as we want them to still have a bite.

Step 7: Add the vinegar, salt, pepper, soy sauce, and just toss to mix.

Step 8: Add the noodles to this. Toss if possible. If the vessel is not big enough, mix using 2 spatulas to avoid breaking the noodles. All of this has to happen on high flame so be careful. Cook for 2-3 minutes till mixed well.

Step 9: Add the prepared chilli garlic oil, check for seasoning and toss again for 1 minute.

Step 10: Top with spring onion greens and serve hot!
