The one thing I always have stocked up in my kitchen are dips! They go with chips, veggies, bread, almost anything, and everything. And when Vidhi Doshi a.k.a. @ramenhairedgirl told me she’s planning to make roasted bell pepper dip with a bagel, I knew this was the recipe that’ll save us in this lockdown. What You’ll Need
2 red bell peppers
2 bagels
2 tbsp olive oil + 1 tsp for brushing
1 garlic clove
2 spring onions, whites and greens
3 tbsp chopped mint
1 tsp lemon juice
Salt and pepper to taste
3 tbsp cream cheese
2 tsp butter
4 tbsp grated cheese
Here’s How You Can Put It All Together
Step 1: Coat the bell peppers with 1 tsp oil and start roasting them on an open flame. Keep roasting till the peppers are charred and black from all sides.
Step 2: Put them in water and start peeling the skin off.
Step 3: Discard the black peeled skin, you will be left with a smoky pepper. Pluck out the stem and roughly chop the pepper.
Step 4: Add the pepper along with the spring onions, mint, olive oil, salt, pepper, lemon juice, and garlic to a mixer jar and pulse it a few times till it’s a course purée or dip.
Step 5: Transfer to a bowl, add the cheese to it and mix it thoroughly.
Step 6: Cut the bagels into halves. Grease a tawa, add 1 tsp butter and place 1 bagel, cut side down till slightly toasted.
Step 7: Flip it over, spread the dip over it, and 2 tsp cheese. Cover and cook till the cheese has melted!
