Anything with coconut in it hits different, no? Especially when it’s in the form of a sweet treat, I can down it in 3 seconds! And so, when Vidhi Doshi a.k.a. @ramenhairedgirl sent in her recipe of instant coconut laddoos I knew I had to try them out. Anyway, now that I am back living with my parents, my weekend days of drinking have ended. Now all I do over the weekend is try out new dishes—not that I am complaining! What You’ll Need

2 cups desiccated coconut

1/2 tsp cardamom powder

1 cup condensed milk

1/4 cup powdered pistachios

2 tbsp oil/ghee for greasing

1 cup desiccated coconut for rolling

Here’s How You Can Put It All Together

Step 1: Add the desiccated coconut to a pan at low-medium heat and dry roast it for 2 minutes till slightly fragrant.

Step 2: Add the cardamom powder and dry roast again for 1 minute.

Step 3: Add the condensed milk, lower the flame, and mix it in. Cook for 5 minutes while continuously stirring and till paste forms.

Step 4: Add the pistachios and mix them all on a low flame. Take it off the heat.

Step 5: Cool the mixture for 10 minutes. Grease your hands with a little ghee or oil, take a little mixture in your hand and roll it into a ball.

Step 6: Roll the ball in the remaining desiccated coconut to coat it.

Step 7: Repeat the same with the remaining mixture and garnish with more powdered pistachios!
