As a child, I hated baby corn. No matter what dish they were added to, I’d spot every single one of them and pick them out. But lately, I’ve found myself eating a lot of baby corn for someone who detested them. And when Vidhi Doshi a.k.a. @ramenhairedgirl shared her recipe for baby corn pulao, I was thrilled. What You’ll Need

1 1/4 cup roughly chopped baby corn

1 cup basmati rice

2 tsp ghee and oil

1/3 cup chopped carrots

Whole Spices

1 cardamom pod

1-inch cinnamon stick

2 star anise

10 peppercorns

3 cloves

1 bay leaf

For The Marinade

2 1/2 cups mint leaves

1 1/4 cups coriander leaves

5-6 garlic cloves

1-inch piece ginger

2 green chillies

1 tbsp curd

1/2 tsp lemon juice

1/2 tsp garam masala

1/2 tsp red chilli powder

1/2 tsp coriander powder

1/4 tsp turmeric

Salt to taste

Here’s How You Can Put It All Together

Step 1: Combine the mint, coriander, garlic, chillies, ginger, salt, curd, and lemon juice in a blender jar and blend till it turns into a smooth paste. Add 1 tbsp of water if required.

Step 2: Remove this marinade into a bowl and add the spice powders to it—garam masala, chilli powder, coriander powder, and turmeric. Mix it all well together.

Step 3: Add the baby corn to this, mix well and keep aside for 30 minutes.

Step 4: Wash and soak the basmati rice for 30 minutes in enough water.

Step 5: Heat oil and ghee in a pan and add the whole spices to it. Sauté for 1-2 minutes till fragrant.

Step 6: Now add the baby corn, along with the marinade and cook for 2 minutes. Add the carrots and cook them for 2 minutes as well!

Step 7: Now add the soaked rice (discard the soaking water) and stir for 1-2 minutes.

Step 8: Add 2 1/2 cups of water and salt, mix well and cover and cook undisturbed for 8-10 minutes.

Step 9: Remove the lid and fluff the baby corn pulao with a fork. Don’t let the rice overcook. In case if there is any extra water left, let it evaporate and then eat hot!
