If I had to choose just one food I could eat for the rest of my life, I’d choose pasta! It is beautiful in every shape, size, and colour and I am always excited to try out a new pasta recipe. And the one person who’s recipes I follow with all my heart is Vidhi Doshi a.k.a. @ramenhairedgirl. Her recipes are just so easy to follow and come out so beautifully every single time. And so, when she shared with us her pea sauce pasta recipe, I knew what my Friday night dinner was going to be. Vidhi’s pea sauce pasta recipe sounds like the perfect way to start the weekend and I am definitely going this route. What You’ll Need

1 tbsp olive oil

2 tsp minced garlic

2 tbsp celery

1 onion, chopped

1 1/4 cup peas

Handful of pasta

Salt

Pepper

3 tbsp chopped basil

Cheese

Here’s How You Can Put It All Together

Step 1: Heat the olive oil in a pan and add the garlic to it. Cook this for about a minute.

Step 2: Add the chopped onion, chopped celery, mix it all well, and cook for another 2 minutes.

Step 3: Now add the frozen/fresh peas, mix well, and cook further for 2-3 minutes.

Step 4: Boil the pasta in some salted water. Once done, strain and keep 1/2 cup of the pasta water aside. Now, add this 1/2 cup pasta cooking water and 1/2 cup regular water to the peas.

Cover this and cook for 6-7 minutes till the peas are cooked through.

Step 5: Let it slightly cool down and blend! After this, you can strain it to get a smooth sauce or keep it as is like I did.

Step 6: Add the sauce to the pan along with the boiled pasta, 3 tbsp chopped basil, and pepper. I don’t add any salt as the pasta cooking water has salt. If you think you require more salt, you can add it.

Step 7: Top with grated cheese and serve fresh!
