Here’s How You Can Make Delicious Masala Khichdi At Home

This pandemic has really brought out the chef in a lot of people and I am one of them too! I never realised cooking could be so therapeutic yet fun at the same time. I’ve even had the chance to try out recipes that earlier felt too intimidating. But all said and done, nothing beats a bowl of hot masala khichdi. And our girl Vidhi Doshi a.k.a @ramenhairedgirl has a super tempting recipe of her own for masala khichdi. If you want to try it out too, scroll down to check out the recipe.

What You’ll Need

2 tbsp oil

2 tsp cumin seeds

1 tsp onion seeds (kalonji)

2 finely chopped chillies

5-6 curry leaves

2 small onions (finely chopped)

1 1/2 tbsp garlic paste

1 1/2 tsp ginger paste

2 tomatoes (finely chopped)

1 cup chopped potatoes and carrots

1 1/2 chilli powder

1 tsp coriander powder

1/2 tsp turmeric powder

1/2 cup masoor dal, 1/3 cup toor dal, 1/4 cup urad dal (all soaked for 1 hour)

1 1/4 cup basmati rice (soaked for 30 minutes)

2 cups spinach

1 tsp garam masala

2 tbsp butter

1/3 cup spring onion greens

Salt to taste

Here’s How You Can Put It All Together

Step 1: Heat the pan, add oil to it. Once hot, add the cumin and kalonji and sauté for 1 minute.

Step 2: Now add the curry leaves and chillies and sauté for 1 more minute.

Step 2

Step 3: Add the onions, mix well and cook for 3-5 minutes till translucent.

Step 3

Step 4: Add the ginger garlic paste and cook for 1 more minute. Now, add the tomatoes, 1/2 tsp salt and cook for 4-5 minutes. Adding salt here helps the water come out from the tomatoes and prevents it from burning or sticking to the bottom and helps it cook properly.

Step 5: Add the remaining vegetables and sauté them for 2-3 more minutes. Now, add the chilli, coriander and turmeric powder, mix well for 2 minutes on medium flame.

Step 6: Add the soaked dals, salt to taste and lightly toast the dals for a few minutes.

Step 7: Add 3 cups of water, mix well and cover and cook the dal for 18-20 minutes till soft. After 15 minutes, whisk it lightly to break down the dal. Now add the rice, 2 more cups of water and cover and cook till both the rice and the dals are almost cooked (about 10 minutes)

Step 8: Now add the spinach and garam masala, cook for 2 minutes till the spinach has wilted. Follow this with the butter and spring onion greens and just mix it in.

Step 8

Step 9: Top the khichdi with a tadka of cumin, garlic, onion, curry leaves, red chilli in ghee and butter! And enjoy hot!
