The recipe is fun and super easy to follow, all thanks to our favourite Vidhi Doshi a.k.a. @ramenhairedgirl. Scroll down to check out how to make it at home, maybe over the weeken
2 large eggplants
Oil for brushing
1/3 cup tahini
3 large garlic cloves
1 tbsp olive oil
1/2 tsp chilli flakes
2-3 tbsp lemon juice
Step 1: Brush the eggplants with oil and roast them over an open flame till the skin is black, charred and crispy, and the flesh is super soft.
Step 2: Let the eggplants cool down slightly and remove the skin.
Step 3: Discard the stems, make a few cuts and put the eggplant in a colander so that the juices run out, for about 10 mins.
Step 4: Add the eggplants, tahini, garlic cloves, olive oil, salt, chilli flakes, lemon juice (depending on your taste).
If you don’t have tahini, just blend toasted sesame seeds with some olive oil.
Step 5: Blend till smooth (or slightly coarse, you do you boo!)
Step 6: Garnish with pomegranate seeds, zaatar, olive oil, toasted pine nuts and flat-leaf parsley!
Doesn’t that look absolutely yummy? If you too try this baba ganoush recipe, then don’t forget to let us know in the comments below how it turned out!
