The pandemic has really made cooking dinners interesting, don’t you think? And although I really enjoy making myself a fresh, hot dinner instead of the usual takeouts I’d eat, it’s not always the same. Some days I am just not in the mood to put a lot of effort into my meals, and those are the days when I hunt for easy recipes that taste bomb. And Vidhi Doshi a.k.a. @ramenhairedgirl always has a new one that checks all the boxes!

What You’ll Need

1 tbsp oil

1 tsp finely chopped garlic

1 cup bok choy

1 cup chopped Chinese cabbage

1 carrot, thinly sliced

100 gms noodles

1 1/2 tbsp dark soy sauce

1 tbsp light soy sauce

1 tbsp sweet chilli sauce

1 tsp hot sauce

Salt to taste

Handful Spring onion greens

Sesame seeds for garnish

Here’s How You Can Put It All Together

Step 1: Heat the oil in a pan, add the garlic and sauté on medium-high heat for 30 seconds.

Step 2: Add the bok choy and stir fry for 1 minute.

Step 3: Add the cabbage and carrot, mix well and sauté for 1-2 more minutes.

Step 4: Add the boiled noodles, all the sauces, and salt. Start tossing the noodles till covered in the sauces.

Step 5: Add the spring onion greens and toss to mix.

Step 6: Remove from heat and garnish with sesame seeds.
