If there’s one thing I absolutely believe in, it’s balance! Life’s all about balance and that applies to my food preferences too. I prefer meals that are a perfect balance between healthy and junk. And this recipe by Vidhi Doshi a.k.a. @ramenhairedgirl is just what I needed! What You’ll Need

1 1/4 cup boiled and mashed potatoes

1 cup broccoli florets

3/4 cup grated cheese

Salt and pepper to taste

2 tbsp maida

1 cup bread crumbs

Oil for frying

Here’s How You Can Put It All Together

Step 1: Blanch the broccoli in boiling water for 1 minute. Let it cool down and chop very finely.

Step 2: Add the broccoli, 1/4 cup grated cheese, salt, and pepper to the cold mashed potatoes. Make sure they aren’t too watery and hold their shape. If the mixture is too loose, you can add cornflour/breadcrumbs to it.

Step 3: Divide the mixture into 8 portions. Take each portion and flatten it in your palm. Add a little cheese in the centre and close carefully from all sides.

Step 4: Mix the 2 tbsp maida with 1/3 + 1 tbsp water to form a thick slurry.

Step 5: Now take one croquette, dip it in the slurry and then roll it in the breadcrumbs to coat on all sides. (If you still think your mixture is too loose, pop it in the fridge for 20 mins before frying)

Step 6: Deep fry them in hot oil and serve with mayo.
