Going vegan may sound like a tough choice to make for some. Especially if you’re a major foodie and feel like you’d have to give up on a lot of delicacies. But what if I told you vegan recipes aren’t any less tasty than your everyday recipes that are not so vegan? Our favourite girl Vidhi Doshi a.k.a @ramenhairedgirl shared her recipe for vegan chickpea curry and I am a fan of it! What You’ll Need

1 tbsp oil

2 tsp garlic

1 finely chopped onion

3 tomatoes, blanched and puréed

1 tsp chilli powder

1/2 tsp cumin powder

1 1/2 tsp curry powder

2 1/2 cups boiled chickpeas

3 cups spinach

400 ml coconut milk

Salt to taste

2 tbsp kasoori methi

Here’s How You Can Put It All Together

Step 1: Heat the oil in a pan, add the garlic and onion and cook it for about 2 minutes.

Step 2: Then add the tomato purée and cook more for about 5-6 minutes, till it is reduced.

Step 3: Now add the spices and cook again for 2 more minutes.

Step 4: Time to add the chickpeas and the spinach and you can cook all of this till the spinach has wilted.

Step 5: Also add salt and coconut milk and cook for 5 more minutes.

Step 6: Now add some kasoori methi, mix well and serve with some steaming hot rice.
