We spoke to Maya Pereira Sawant—a personal trainer, metabolic nutritionist and founder of Lean Kitchen by Maya for some yummy recipes that are also healthy and can be devoured as evening snacks without any guilt. And she gave us just that—a low carb zucchini fritters recipe!

This is an easy-to-go recipe this zucchini season. You can also tweak this quick recipe and add carrots or potatoes, it tastes too delicious. Or, you could also play along and use feta instead of hard cheese, or add parsley instead of scallions and find your perfected recipe!

What You’ll Need

600 gm zucchini (4 cups)

60 gm parmesan cheese (1/2 cup)

100 gm almond flour (3/4 cup)

2 large eggs

80 gm scallions (3/4 cup)

2 tsp salt

1 tbsp olive oil

Greek yoghurt for serving (optional)

Here’s How You Can Put It All Together

Step 1: Shred zucchini in a food processor or with a hand grater. Generously sprinkle with rock salt and leave aside for 20 minutes. Now, squeeze out all excess water using a clean kitchen towel.

Step 2: Chop the scallions and set them aside in a bowl.

Step 3: Grate some parmesan cheese and set it aside in a bowl.

Step 4: Leaving zucchini in some salt helps to make healthy fritters crispier and less watery.

Step 5: Using your hands or a sieve, squeeze out the liquid from the zucchini. Don’t miss this step, as it will help the fritter to maintain its shape and not fall apart.

Step 6: Combine the zucchini with eggs and cheese, mix it with almond flour and add chopped scallions to the mix. Season with freshly ground black pepper.

Step 7: Heat a little bit of olive oil in a pan. These don’t need to be heavily fried. Form fritters with about 2-3 tbsp of the zucchini mixture, pressing them lightly into flattened balls. Place them with about 1-2 inches spacing on medium heat and cook them for about 3 minutes on each side until they’re golden brown.

Step 8: Repeat until you have about 9 fritters. You can place them on a paper towel to absorb excess oil. Delicious zucchini appetisers are ready! And of course, you can double the recipe to make a bigger batch.

These easy zucchini fritters are best served hot with Greek yoghurt, sprinkled with scallions.
