There is a specific time in the evening when one wants to indulge in junk food. Most of us turn to street food like pani puri, sev puri, samosas, vada pavs and bhel. But sometimes, we’re unsure of the hygiene levels of these dishes. This is why it’s better to make these at home. Here’s a simple vada pav recipe curated by Vidhi Doshi a.k.a @RamenHairedGirl that you can cook in minutes!

What You’ll Need

2 tsp oil
1/2 tsp mustard seeds
1/4 tsp hing (asafoetida)
8 curry leaves
2 large garlic cloves, very finely chopped
1/2 inch piece of ginger, very finely chopped
1 – 2 inches very finely chopped green chillies
3 large potatoes, boiled and roughly chopped
Approx 1/4 tsp turmeric powder
Salt.

1/2 cup besan
2 – 3 pinches turmeric powder
Salt to taste

Here’s How You Can Put It All Together

Heat oil in a pan, add the mustard seeds and let them crackle. Add the hing and curry leaves and saute for 30 seconds. Then add the garlic, ginger and green chillies and saute for 30 secs- 1 minute.

Add the potatoes, salt and turmeric powder, mix well and mash it really well with a masher till it all comes together. This is to be cooked for 3-4 minutes on a low-medium flame. If you want you can turn off the gas, mash it well and then turn it on and cook again.
This is also where you can add 1/4 cup of finely chopped coriander if you wish. Keep aside to cool.

While it’s cooling, mix together besan, salt, turmeric powder and water, little by little to get a consistency that is not too watery and not too thick, an approx 1/4th cup more or less.

Once cooled, shape into 3 round balls.

Heat oil for deep frying. Dip the balls in the besan mixture, coat evenly and deep fry till nice and golden. Serve hot with pav, fried chillies and chutney!
